One of my favorite things to do is cook. Few things compare to hearing someone rave about food you have prepared from scratch. The best compliment of all? A request for the recipe.

Coconut Tres Leches Cake
From Mel's Kitchen Cafe.
1 Tbsp. LorAnn coconut bakery emulsion, optional
1 15-oz. can Coco López Cream of Coconut, shaken well
1/4 C. powdered sugar, or more to taste
1/2 tsp. vanilla
Fruit (raspberries, strawberries, bananas, and/or fresh pineapple)
Make cake according to package directions. If using, stir in emulsion. Pour into a 9x13-inch pan and bake according to package instructions. Remove the cake from the oven and place it on a wire rack to cool completely, at least one hour.
While cake is baking, whisk together 1 C. heavy cream, Cream of Coconut, and evaporated milk until smooth. Set aside.
Using a fork or skewer, poke holes all over the cooked cake. The more poked holes, the better.
Pour the syrup mixture all over the cake. Some will puddle on the edges and will look like it's not going to soak through, but it will!
Cover with plastic wrap and refrigerate for several hours.
For the whipped cream, pour 1 cup heavy whipping cream into a large (preferably chilled) glass bowl and beat on high speed until thickened, about 90 seconds. Add powdered sugar and vanilla extract. Beat on high speed until stiff peaks form, 1 to 2 minutes longer.
Toast coconut flakes by spreading them on a baking sheet lined with parchment paper and baking at 375° for 5-8 minutes or until golden and toasted, stirring every few minutes. Watch carefully as the coconut flakes will toast quickly and can burn!
Remove cake from refrigerator. Top cake with whipped cream and then toasted coconut flakes.
Serve with banana slices, fresh berries, and/or fresh pineapple.
