My mom always made this recipe during the summer and it was a staple at our family reunions. My favorite part? The smoke from the dry ice as it evaporates. As an aside, I never realized rootbeer extract was a Utah phenomenon, kind of like fry sauce and ice blocking. Members of my ward in Michigan who traveled to Utah would come back loaded with this stuff because the local grocery stores didn't carry it.
1 lb. sugar
1 gallon water
1 oz. rootbeer extract
1 lb. dry ice
Mix together sugar, water, and rootbeer extract. Add dry ice. Keep mixture covered, not tightly, while dry ice is bubbling. Let sit for a few minutes until the rootbeer is carbonated. Because the dry ice evaporates rapidly, the drink must be used within several hours or it will go flat.
